How to Make It

Step 01
Freeze the watermelon

Cube seedless watermelon and freeze solid overnight. Frozen watermelon gives a slushy, granita-like texture that is completely different from fresh. It requires no added water or ice โ€” the fruit is already 92% water.

Step 02
Blend with basil

Blend frozen watermelon with fresh basil leaves, lime juice, honey, and the pinch of salt. Blend until a slush forms. The basil disappears visually but its aromatic oils create an unexpected herbal depth that makes this unlike any other watermelon drink.

Step 03
Slush and serve

Rim glasses with Tajin (salt + chili + lime powder). Pour the slush immediately โ€” it melts fast. Top with a basil leaf, watermelon triangle, and another pinch of flaky salt directly on the surface. The salt makes the sweetness sing louder.
